Garlic Toast with Aubergine spread
* Roasted & mashed aubergines,
* Finely chopped caramalised onions,
* Whipped-creamy yoghurt,
* Saffron dipped in water, salt & pepper.
*Roasted and crushed peanuts, chopped coriander, and a teaspoon of Olive oil(To garnish)
Process – Take the roasted, mashed aubergines/brinjals in a bowl. Add, the finely caramalised onions, whipped cream, saffron water a wee-bit. Mix all of them with salt and crushed pepper corns. Once done, transfer into the serving bowl, and sprinkle the crushed peanuts, coriander and the olive oil. Serve it with well toasted garlic breads.
***Food presentation is extremely important. It can actually kill or increase an appetite.
Take some hung curd. Whip it up extremely well. To that, add fnely chopped/crushed garlic, green chilles, coriander leaves, butter, salt & pepper. This can also be served with soup-breads.
